Crispy Crab Sushi Squares

Ingredients

  • 200g Yutaka Sushi Rice
  • 1 tbsp Yutaka Rice Vinegar
  • 1/2 tsp sugar
  • 1/4 tsp salt
  • 100g white crab meat
  • 1 tbsp Yutaka Mayonnaise
  • 1 tsp Sriracha
  • 1 tbsp plain flour
  • 1 egg, beaten
  • 4 tbsp Yutaka Panko
  • 1 tsp vegetable oil
  • 2 radishes, finely sliced
  • 1/4 cucumber, shredded
  • 1 tsp Yutaka Sesame Seeds

Directions

  1. Rinse the sushi rice under cold water until the water runs clear. Cook according to packet instructions.
  2. Mix the rice vinegar, sugar and salt, and stir into the rice. Press the rice firmly into a square container or dish lined with cling film. Chill for at least 30 minutes to set.
  3. Mix crab meat with mayonnaise and sriracha to make the spicy crab topping.
  4. Turn out the chilled rice block and cut into small squares. Dust each with flour, dip in beaten egg, then coat in panko.
  5. Heat oil in a frying pan over medium heat and fry rice squares for 1-2 minutes per side until golden and crispy. Drain on kitchen paper.
  6. Top each crispy rice square with a spoonful of spicy crab, few slices of radish, and shredded cucumber. Sprinkle with sesame seeds to serve.
